Once a month, I am sharing some of my favorite WW recipes and their point values. I love creating new WW friendly recipes but even more so finding them already created and taste-tested from WWers. I’m funny when it comes to sweet treats. I don’t like to spend more than 2 – 3 points on them. In my weight range, you get 23 points a day, plus 35 weeklies to use throughout the week. To stay in the blue dot zone, you can have 28 a day.
LM’s 4 Point Huge Muffins are probably my go-to breakfast food. I pair one with 2 boiled eggs that I chop up and mix with yellow mustard. Now, let’s be clear, I am not eating the eggs and the muffin at the same time. The muffin is more of a dessert to my eggs. Here’s what you’ll need to make these muffins. And yes, I use real butter. I am going to make them again and try adding a Devotion flavor packet. I hear good things about these flavor packets.

Instructions
- Place bananas in a bowl and add baking soda. Mash bananas and leave to the side. In a mixing bowl, add Quest, Flour, Splenda. Add applesauce to bananas and pour into dry ingredients bowl. Add eggs and blend until smooth.
- In a 6 count muffin tin, divide batter, leaving enough for 2 more. add chips to top and bake roughly 30 – 35 minutes. One muffin is a serving size.


Zoodle Beef Spaghetti is by far one of my favorites. After having given up most pasta after a bad experience eating pasta pre-race, I all but gave it up completely. I still love Stouffer Lasagna, but it isn’t waist friendly and would be considered a treat. So, when the guys are wanting pasta, I brown some 93% lean beef and add it to some Newman’s Own Sockarooni sauce. Beef and Sauce together are about 9 SP for a cup. I am certain my points are heavy here, since a cup full isn’t going to hold 3 oz of beef and 3 oz of sauce. I am not a stickler on this one since the rest of it–the zuchini noodles, tomatoes, and mushrooms sauteed in Pam are ZERO points. This dish is healthy and filling. Want to reduce the points? Try ground turkey or shrimp or even grilled chicken. It’s yummy!

Asian Chicken Lettuce Wraps are somewhat lacking, but this plateful is 2 points. I grill my chicken on the stove top. Then chop it up and mix with 2 TBS of Ken’s Lite Asian dressing. If you haven’t tried Ken’s Lite Asian, you are missing out. This is by far my favorite. I like to buy the small romaine at Costco for these wraps….or as I eat them….lettuce tacos. You can add Cashews, but remember to count those points!
